Show the contents of the list once you start typing

In Utilities, Preferences choose General Preferences, Drop down lists, Auto dropdown

Change the item information displayed

In Utilities, Preferences choose General Preferences, Drop down lists, Item Information Displayed.  Choose the item information to be displayed when an item is chosen.

Change the patron information displayed

In Utilities, Preferences choose General Preferences, Drop down lists, Patron Information Displayed.  Choose the patron information to be displayed when a patron is chosen.

Allow new records to be added to drop down lists as people are entering information

In Utilities, Preferences choose General Preferences, Drop down lists, Allow adding new records to drop down lists.  Check or uncheck the appropriate lists.

Filter the drop down list based on what has already been typed

In Utilities, Preferences choose General Preferences, Drop down lists, Incremental Filtering.  With this option checked and Auto dropdown checked, the only entries shown in the drop down list will be those that match what you have typed in.
